Go to the view menu

Press enter on header and footer.

Type the title.

Press the alt key and then control tab until you hear the toolbar for 
headers and footers. It should say insert auto text.

Arrow down to page and hit enter.

 You should be back in the header. At this point you should have the 
title and page. Here you can manipulate the type as you would in Word, 
point size, font, alignment.



To have numbering pick up on the second page, go to the insert menu, 
enter on page numbers and uncheck show number on first page.

Do you know how to include a changing page number in a header?  I don't 
mean
by using the Insert/Date and time feature, I mean within a header. 
Let's
say you're creating a document of five or so pages about creating 
headers
using Jaws.  You want the header to begin on page 2, so, as Judith
suggested, you go to the beginning of page 2 before beginning your 
header.
Now, let's say you want the header to read

Headers-- 2 on this page, header-- 3 on the next, etc.  (Francis, I know 
you
don't like the appearance of this style of header, but it's required in
certain professional areas).  I remember from a few years ago, a few
versions of Word ago, that you would type the text you wanted, Headers, 
in
this case, and the em dash, a space, and then a certain code that told 
Word
to insert the current page number.

I don't know how it's done, now, and have a lot of trouble accessing my 
word
help with Jaws in Word 2000.  Do you know how this is done, currently?

To add to this header discussion;
I often add auto text to my header like the file name, file and path, 
and or
the date created. You can then also press the down arrow and create a
footer. Auto text has the page number x of y so your numbers show as say
page 1 of 2. If you add more pages, your footer will adjust accordingly.

  Yup, you can do Alt C, but I found you can save your work in the 
header
and
  exit the header edit area by going to change the view to normal.  I 
found
it
  by accident, and it's a lot easier than working with the toolbar.
However,
  the nice thing about Windows is that there is no one way to get the 
job
