Corey, it seems as though you may not be getting the information you are seeking about chat rooms. There are chat clients, some of which have been listed already, which permit those of us using screen readers to text or voice chat with one or a number of people. Chat rooms are, I believe, a slightly different animal. In chat rooms, any number of people can come into a room, chat for a while, then leave. IMHO, following a conversation with a screen reader in a chat room is difficult because you have to read through all the other conversations to follow the one you are actually participating in.
