I'm using JAWS 10, and this is how you do it:

1. Bring up the application you want to temporarily mute speech
for.

2. 2. Hold down the insert key and press the number 6 on the
number row at the top of your keyboard just below the function keys to
go into the JAWS Configuration Manager.

3. You may get an edit box asking for the name of the
configuration manager file you want, this happens if JAWS doesn't
already have a configuration or .jcf file for the application. If this
happens, press enter.

4. Hold down the alt key and press S to go to the set options
menu.

5. Up arrow one time to advanced options and press enter.

6. You will hear JAWS say 'Sleep mode enable checkbox not
checked'. Press space bar to check this box, then press enter.

7. Press alt-F4 to close the configuration manager and answer by
pressing 'Y' when asked if you want to save changes.

Now, every time you bring up the application, JAWS will not speak, but
it will resume speaking when you close out of it.
