That probably depends on the school. I'm guessing most of the courses you find would have some sort of online message forum component, which should be accessible. If the course is through a public college, I believe they have to be ADA compliant and accessible.
I'm taking a course through BerkleeMusic Online, and all the online stuff is accessible through their Web site. I still had to buy and scan the textbook we're using for the course.
