I haven't got Jaws 9 but in 7 using the verbosity dialog to switch
'Style Changes' on does what you want.

Hi, is there any way to hear changes in formatting like underline, bold,
or 
italics when arrowing down through a word document with jaws and not
have to 
do anything in regards to changing the jaws skemes?
If not, is there a "safe way" to change these skemes and back them up in

some way, so that you can revert back to them should anything go wrong?
Any help with this would be appreciated.
