I don't know of a jaws specific way of doing it, but Word does provide a
way to do exactly what you want.  There are a lot of free tutorials if I
don't give you enough information, but for organizing and quickly
navigating large documents, Word provides 2 different features that are
almost, but not quite, the same.  They are called Outline view and the
document map.
 
I think the outline view is easier to use for someone who is blind, so
here's a qquick sketch on it:
 
* first, you need to construct your document using the built-in heading
styles from Word.  You use these to format your headings such as
"beverages" etc.  This requires you understand at least a little about
paragraph styles in Word.
 
In addition to setting the appearance of your headings, when you use
these styles, it will assign that paragraph an "outline level" number
from 1 to 9.  When I say paragraph here, I'm using the Word term, but
it's likely the heading will be just one line; however, when you end it
by pressing the return key, it becomes a Word "paragraph".
 
After you've constructed your document as you would a web page (as you
described earlier, but using these Word heading styles), you've are now
set to the great Word hidden feature!!!  Under the view menu is
something called the "outline view".  You need to take 2 steps:
 
1)  Choose the outline view
2)  Use the outline toolbar, which just appeared, to help you limit
which headings you wants to see.  The text between headings is called
"body text" by Word, and by default, I think outline view shows you your
entire document, including body text.  But, on the outline toolbar is a
list box which lets you limit what is shown to headings of a certain
level.  If you set this to level 2, then you'll see a view of your
document that only shows you your headings 1 and 2, but nothing else;
you can easily skim down to the section of the document you're
interested in, then, change your view back to normal or print, and
you'll be right where you need to be in the document.
 
This feature is fantastic for moving around documents that are very
long, and for giving you a great overview of what you've constructed.

Hi List,
Forgive me if this turns out not to be able to be called a jaws
related question. I use a keystroke on the web and hoped to use it or
some thing like it in a word document. so here it goes: 
  When on a web page you can advance down to the next heading by
pressing the letter H, now my question is: I have copied a dinner menu
from my local supper
club into a word document and would like to use the header
option like on the web pages on the menu in my word document. What I'm
after is putting headers
called beverages, sandwiches, dinners, desserts, appetizers and
side orders in as headers and then filling in the appropriate items
under the appropriate
header so when I go to that document and the sandwich header is
three fourths of the way down the document all I have to do is hit a key
stroke to bring
me down the headers till I get to the one I want. If there's a
way to do this I'd appreciate it if I could get step by step
instructions on how to accomplish

I'm thinking there might be a jaws keystroke to accomplish this.
