Adam, I don't know of a single keystroke for doing this, but while you are in the new mail window, the keystroke Alt + P will open the Message Options dialogue, with focus in a combo box where you can change priority, along wth a number of other options. You can also get to the same dialogue from the View menu. This affects only the current message. You can also set high or low priority as your default level for all messages in the following way. From the Inbox open the Tools menu and choose Options. Tab to the Email options button and press it. Tab to the Advanced Email options button and press it. Tab to the When sending a message set importance combo and change it. Then OK out of the three dialogues you have open and you'll be back in the Inbox.
