  What I do is hot switch to the RealSpeak voice (JAWS-Ctrl-S, then use the 
JAWS voice menu to set the volume.  Try to get it as close as you can to 
eloquence, to avoid a jarring transition.

    I'm using the  real speak voices in say all.  How do  I adjust the volume 
of these voices so that they're not real loud when using headphones  ?
