On the main window of outlook 2007, press the t key to go to the tools menu,
then the o key to launch the options window. Switch tabs to the mail format
tab by pressing control + tab. Tab on the page and you will find a combo box
giving you the option to compose mail in HTML or Plain text, make the change
there and tab till you get the Apply or OK button, enter and you are done!
