Hi Jane, mind if I come in here? In the file menu select new folder and
give it a name. Then tab once and you should get a list of such things as
local folders, in box, out box etc. Select In Box and then press okay. I
personally put all mine under local folders.

Decide where you want your first new folder to appear. (I personally like all extra folders under the "In" box.)
Go to the "In-Box but not into a message.
Hit CTRL+SHFT+E and you'll be asked for the name of your new folder. Just give it a name and you're done.
Now, if you want a sub-folder under that one:
1) Go to your new folder but not into a message;
2) Again, press CTRL+Shft+E and give your folder a name.
That's all there is to it!
