I had the same problem with a file that was nearly 200 pages long.  I took 
out all the formatting, made sure all the font was the same, and checked 
page set up but Jaws always went sluggish.  Eventually, I cut it into 2 100 
page documents and everything was fine.

No solution jJamie, but could you divide the document up and edit one
section at a time, before reassembling?
