That's called server publishing.
ISa even has a wizard to help you accomplish that task
It's all over the ISA help and many articles at the site where you joined this

Hey all I was wondering if anyone had any docs or links that will help me setup 
an ISA server to accept SMTP from the internet and forward to an exchange 
server on a local lan.
