Found it:

1 - open a cmd window
2 - type the following:
        osql -E -S %computername%\msfw
        sp_configure 'show advanced options',1 reconfigure with override
        go 
        sp_configure 'max server memory', nnnn reconfigure with override
(where nnnn is in mb) 
        go
        exit
3 - restart MSDE - note that you'll also have to restart the ISA
Firewall service manually.

..I'd recommend giving MSDE at least 1/3 physical RAM, depending on how
much your system actually has.

From my understanding MSDE for ISA is a special version and you should
only do patches that are released for ISA.

        I see the memory usage is slowly inching its way back up again,
and the SQL server service is starting to take up more CPU cycles...

         

        Possibly an MSDE upgrade is in order?

        Caching grabs 25% of physical available RAM by default.

        This is changeable in teh caching control UI.

        THere is a known problem with MSDE sucking all the available
process / RAM from teh machine.

        I'll see if I can find the reference.
