You would have to bind another public IP address to your NIC and update
MX records for the second domain.  (I assume mail for both domains
coming to the same IP).  That sound like too much work to me:)

Better option is to configure Exchange 2000 to receive mail for both
domains and configure Exchange 2000 to forward mail for the second
domain to the Exchange 5.5 server.  Not sure exactly how to do this, but
I'm sure there is something out on MSExchange.org.
