With regards to setting up logging to a database, what is the easist
method for doing this?  Do you simply have to setup a database, and the
logging service creates tables / columns etc, or do you have to create
the columns/tables yourself?

I've been looking at doing something like this for a while, but haven't
been able to find the time to sit down and look at it.  If I get the
database going, the ASP should be reasonably easy to code, and I'd be
happy to share :)
