Here is the skill flag for changing terrain.

.replace_terrain=, takes oldTerrain|newTerrain and causes the skill to
replace the old terrain type with the new one. You can specify multiple
replacement groups by separating them with commas. Such as:
grass|burnt_grass,tree|burnt_tree

So, if you wanted to be able to "destroy" a bridge, you could have a unit
possess a skill that can change a bridge terrain into whatever it is
crossing over, for example water.

This then can put the terrain you want in, and give the range bonus you
would like. A structure would not be  as good as simply changing the
terrain, in my opinion.

I think you should consider Craig's and Carlos's multiplayer maps, and dig
around in the  files and play the maps to see what they did.
