It’s an interesting problem but certainly not unique to you. If you search on
Google you will find lots of complaints about it but nobody seems to be able to
pin down a common cause.
I find that sometimes they read OK on my phone (and sometimes not!) but if I go
into webmail they usually are OK.
Spam trapping is getting more severe now and that may be catching more of them
and diverting them so they never get downloaded (obviously something in the
headers is a bit “sus”). For that reason I have spam trapping set to just mark
as (SPAM) but deliver regardless. That ensures all mail is downloaded (but
viruses are still filtered out usually on the server – I’ve had just one caught
locally by my own software in the past two months).
I don’t fully understand the “Redacted sender…” bit but DMARC is an email
security protocol. Despite that they still get through. I’ve seen it on some of
Karen’s emails too.

which could be the reason I only receive emails from everyone else. I remember
asking right at the beginning why my emails were appearing in the "in box" with
email address rather than my name. Like you, Tony seems to receive a load of
rubbish when sent from my mobile.
This may all sound gobbledegook but it will be letters you can read and not a
load of characters that you can't even find on a regular keyboard.
