It is saved both as an attribute and a resource in the executable file. It is not show by default anywhere other then the FileTypes app (I guess AboutSystem also shows it for some apps at least).

In any case, I think the setting doesn't look important for endusers.

However... :)
FileTypes Preferences don't necessarily (and in the majority seem not to) deal with applications, but with filetypes. So, taking e.g. a Person file, the Description says "Contact information for a person". And there's no attribute with that info:
