With regards to the CMYK/RGB problem, more and more digital presses use the RGB-"ish" colorspace, and, if proper color calibration and profiling is done, you should be able to get a full range of hues in both colorspaces. Further, flipping through a Pantone book could be helpful too, as the inks are consistent.
