Never thought of that...
Maybe an attribute being handled and possibly overwritten by a system 
service shouldn't be used by a user to keep track of mails.
Shouldn't we better use META:keyw instead then? We could still have a 
single "Set to..." function which will set the MAIL:status attribute 
for New, Sent, Replied, Read (if the user wants to explicitely set e.g. 
a "Read" email back to "New"). A custom status should then be added as 
META:keyw.
The status display will always show the META:keyw if available, else 
Mail:status.
