Could someone please elaborate on that? I understand the "extend the
known hosts and services" part, for it is part of the reason zeroconf
was created, but I'm not sure how an instant messenger comes into
play...

An instant messenger here is probably an example for a service provided by an application, for instance Apple's iChat allows to discover other local iChat users via Bonjour.
