Double clicking the title is a common function, you just don't know what will happen, or will expect something different when coming from another platform. Since you cannot really know what will happen when you click one of those buttons for the first time, the learn effect is exactly the same; I agree that double clicking the header is more obscure, but not badly so. Besides, with workspaces you're not really dependent of that feature, anyway.

disadvantage of adding more visual noise, but please allow others to

Sure, I always allow others to disagree -- doesn't mean they're right though (to be fair, it also doesn't mean I'm right, I'm just stating my opinion, anyway) ;-)
