Please, please, if you want to replace it, check what GNU/Linux does first, as we can probably reuse part of it:
https://specifications.freedesktop.org/shared-mime-info-spec/shared-mime-info-spec-latest.html

If we need to replace the syntax I don't see any point in reinventing the wheel, reusing the XDG one is a much better option (and we can still propose updates to it).
