I'm not sure why escaping the space doesn't work ... HaikuImage even uses it.

However, this works:
AddSymlinkToHaikuImage home config be "Desktop applets"
: /boot/apps/FRiSS/FRiSS ;
As well as this:
AddSymlinkToHaikuImage home config be Desktop\ applets
: /boot/apps/FRiSS/FRiSS : FRiSS ;
