Spanish omelette. 6 eggs whisked. 1 mug of frozen diced onions. 1 mug of frozen peas. 1 mug of fresh tomatoes chopped small. 1 mug of tinned jersey royal potatoes chopped small. Method. In a mixing bowl whisk the eggs. Cook onions on browning plate in microwave for 5 minutes, add peas, tomatoes, potatoes and after put them in the mixing bowl with the eggs and stir. Put some of the mixture on the browning plate and cook for 5 minutes, leave for 5, cook for 5, leave for 5 continuously until set. Eat and enjoy with salad or chips or both. The remainder mixture can be cooked for your supper. Mine is cooking now. You can add pieces of bacon or chicken or sweetcorn or mushrooms, just add and omit accordingly.
