I see that IE7 is out of Beta and it has been officially released. (See
links below). I currently use GP to automatically give all my users a
group of Favorites (Favorites for our company policies, Benefits,
Retirement, Health Insurance, Webmail, etc). Will I need to load a new
adm template for IE7 administration, or will the existing settings in
the GPMC on W2k3 work? So far the beta excepted IE Policies I
implemented, even on Vista.

You know how FireFox has a ton or plugins, now so does IE!

IE7 Check Lists- see the "IT Professional" portion

IE7 Internet Explorer Administration Kit (Deployment, note: Automatic
Updates will push IE7 Nov 1st)
