Hello Dani,
I was where you are a few months ago and got stuck many times. Albert
(at tech support) helped me a lot, and now I feel like I can handle the
GoodFeel programs pretty well for what I need. I'm only doing choral
music for one student's part, and don't know anything about Sonar. But I
can make a suggestion for your #2 question. 
To delete extra beats in Lime, just add a measure and enter the notes &
beats correctly, then delete the wrong measure. That's a lot easier.
I have figured out that you can use "kill" sometimes, like to delete
rests, but it doesn't always do what you think it should!
Keep trying; it gets easier!
