I personally prefer gesture to grab'n'release.  I don't think that there's
any ambiguity with musical gestures if we specify the terminology to be
"parameter change gesture" or "control change gesture" rather than just
"gesture".  The word "gesture" I think gives a much better image of what
the thing is than "grab" or "capture" or "release" do, which makes it
sound like mutex-speak, which it totally is not.  It just sounds like very
wrong and inaccurate terminology to me.
