There is actually a couple of steps to this process.
First is to get your county field updated in GSAK. The macro Nathan
referred to is for that purpose. Be aware that older versions of GSAK
did not have a county field and used a user field for that purpose.
Second is to see your progress on the SLAGA Challenge. Go here for a
macro to do that:

This macro does not check the special conditions (e.g. dates, state
parks, etc) but does check the counties in the current view of GSAK
against the list of counties in the SLAGA County Challenge. Set your
filter prior to running the macro to only show your finds after the
date your started the SLAGA County Challenge and you should get an
accurate picture of your progress.
