Well, if the user is subscribing with one address and trying to unsubscribe with another, there's obviously a problem, and it doesn't appear to be yours. :) The configuration issue here appears to be on the client's side -- joe@xxxxxxxxxxxxxxxxx won't appear from a properly-configured mail server.
