In Outlook 2003, you could export to Excel the Archive folder. The Import/Export wizard will give you an option to choose columns which you wish to export and which ones you don't want to export. End of the day, you get a Excel file with columns of your choice (FROM, Date, Subject) and value in the rows for those colums.
