Before you begin anything Godfrey, I would like to know if the present server 
running Exchange 2000 Server is a domain controller or not. If it is a domain 
controller and a global catalogue server, the procedure of what you have to do 
is different if it just a member server.

production to be removed and have the new one in production. what are the 
procedure should I follow ? Apart from taking backup of the one to be removed?
