It's called Journaling, all traffic in and out of your system will be copied to a common single mailbox, just do a quick search on journaling on Microsoft's site or Google. You can then use other techniques to push that out to another system like Sharepoint, Common Store and the such for archiving, records retention, e-discovery and so forth.
