You should be able to accomplish all of the requirements by simply
modifying your recipient policy.  Here is an article you may find

Hi,

I have a domain name say @MarketingCompany.com.ae; I already have every
thing setup and working in the domain and exchange, now the managment
want to change the email addresses from @ marektingcompany.com.ae to
@mc.com.ae , but they want:

- the existing users still receive thier emails @marektingcompany.com.ae

- the new users recevice thier emails @ mc.com.ae

- the existing users receive emails addressed to them @mc.com.ae as well

in summary they want if any one send to @marektingcompany.com.ae or to
@mc.com.ae the email arraives with no problems, how can this be done in
exchange??
