You can achieve this using an SMTP Event Sink as detailed in this
Microsoft KB article:

But I would suggest you look at MailBasket Lite (free utility)

Exchange 2003 Server

is it possible within exchange to direct all incoming mails to a
specific domain eg @domain.com to a specific mailbox?  if so where can I
find info on this
