Is your Store.exe in task manager eating all the ram? If so, I had that problem as well until I installed the post sp3 rollup for exchange to it. It's normal for the Information to take all available memory, but it's supposed to give some back if needed, that wasn't happening well, prior to this. I hope you don't have a whole lot of mail users yet though; you might want to examine how your system is set up. Single partition is begging for trouble, 512 MB Ram may not be enough for Exchange to be efficient. There are load simulators available from Microsoft to allow you to test your server's performance, giving you some help in guest-imating how your server will perform with all your users.
