I think a figured it out: The specific recipient she was sending to
had their contact/address properties set for Outlook Rich Text Format.
Even though the recipient does not use Outlook.
Our Exchange Server is set for Plain Text, so I am wondering why it
did not fix the email.
Anyway, case closed for now.
