SMTP Virtual Server & Relaying

Hi All... and assorted Gurus,

We are running Exchange 2000.  Last week our server was being used as a
relay for junk mail.
I went to the SMTP Virtual Server Properties, Access Tab, Relays.
Here it was set (by the previous network admin) to "Allow all except the
list below:"...and the list was empty.
I assume most of you set up relay restrictions?  Being new at this,
exactly how do I set this up to receive our email but not allow anyone
to relay junk mail through us?  We have two domain names that we can
receive mail through.  "mail.domainA.com" and "mail.DomainB.com".  Both
translate to the same IP address.  But I configured it to only allow
relaying from the IP address and I could receive mail for DomainA but
not DomainB.  If I remove the restrictions we receive mail for both
again.
Any help will be greatly appreciated.
