Yes and no.
 
Can it be done?
 
Yep, as long as your Exchange server is not a domain controller.
 
Is it supported?
 
Nope.
 
If you have multiple Exchange servers it can also mess up routing.
 
Generally, this is a thing to avoid.

Is it possible to rewrite headers for all mails from my organisation to 
Internet and hide sensitive informations as the name of my local server
or 
my local domain name.

For example :

***** We can see private IP address...

and 
Not the Internet DOmain !
