Yes you can do this using the Microsoft Catch-All SMTP Event Sink, here is

  We have a client who thinks some of their users are getting e-mails from
inappropriate places.  Is there a way to redirect them so the person that is
getting them gets them and also the administrator gets them without the
other person knowing.

  Any help would be grateful.
