If the servers are in the same site, and you are moving mailbox between
them, the clients will automatically redirect to the new server.

If the new server is part of the same site it should automatically redirect
clients.

This is a good idea, but when I install a new server I must assign a new
name to the server. The Outlook clients points on the old server name. In
wich way can I redirect the Outlook calls to the new e2k ?

I would suggest that you install a new exchange server in the same domain
and move the mailboxes and public folders over there. Then uninstall the
other exchange server and delete it from the organization
