For Ex2K there was an event sink that automated the booking of
conference rooms and other resources.  I don't know if the same sink
will work on Ex2k3 but check out slipstick.com

We have 5 conference rooms - is there an easy way to have these
conference rooms have calendars that can be maintained through Outlook
by a few administrative assistants?

We currently have Exchange 2003 on Windows 2003 server and the clients
are running Outlook 2003.
