By Personal Folder I'm assuming you mean a mailbox store and not a PST?
If you've got a PST that size thats working then call Guinness World

Your time is going to be affected more by the speed and I/O abilities of
your drives than by your CPU and memory.  I have nothing that large, but
you can do a little comparison.  The last offline I did was a total of
about 50gig between the .edb and .stm files, it took about 7 hours, this
was on a FastT SAN using 15K drives.  I'm guessing you could easily be
20+ hours on yours.
 
A couple hints, use fast didicated drives with a hotrod controller.  Use
the /p parameter so your original files arn't touched, this is a life
saver if something goes wrong.  Enter the eseutil command line in as
much detail as possible so you know exactly what it's doing, to which
files it's doing it and where it's putting the new files, eseutil isn't
the greatest if you let it takes defaults.  Consider breaking up your
mailbox store into multiple smaller ones, at that size your obviously
runnig enterprise, so you can go up to 20 seperate stores on 2000, not
sure of the limit on 2003.

I have a 185Gb Personal Folder that requires a offline defrag, Can
anyone advise roughly how long this might take?

 

The server is a dual 3gig processor with 3 gb of RAM
