You don't have to delete and recreate the user accounts. Open Active directory users and computers from All programs--> Microsoft Exchange from your exchange server and select the user for whom you need to enable the mailbox. Right click on the user and click on exchange tasks and select create mailbox option and provide necessary details when prompted. You are done.
