Leave the M: alone, it is not a real drive, it's a virtual
representation of the drive that Exchange is installed on, do not play
with the M:

Log files are very important, and will be purged when you perform a full
online backup of your Exchange Storage Groups using an Exchange aware
backup program such as the Windows Backup program on your Exchange
server.
