Currently they have no backups that can be restored from, if that was
available I would have resorted to the disaster recovery method of
recovering the data.
Secondly they have just installed an antivirus, and this antivirus most
likely would have moved these log files, I have checked the quarantine
folders if the log files are there, but they are not......

Do they have an Exchange aware backup?
Are they scanning that server with a file level antivirus?
