This is nothing to do with deleted ITESM. The store does not grow all of a
sudden. ..The main cause could be SAPM, Loop Message, anti virus or
corrupt database.

First things first..

Check for SPAM and loop message

If you have any AV or SPAM software disable it and reboot the box and then
check if the store size is increasing or not.

Next create a new store and move all the mail boxes to the new store and
then monitor if the new store size is increasing or not.

If you have a standard version of Exchange, exmerge all the data into .PST
files and then start Exchange with a blank store and import the data back
and then monitor.
