And at last and not the less important:

1) do not forget to change the MX to your new server exchange, otherwise
all mails will be NDRed :)
2) If u have pop/imap clients, u must reconfgure their profile to point to
your new exhange. For MAPI clients, they will be automatically redirected
as stated Simon.
