So there is no other way to use the exchange forwarding option for
external emails??
 
If you look at someone's AD properties, the click on Exchange Advanced
(I think) then Delivery Options there is a field there for forwarding
but it only lets you forward to people in AD.

Create a new "Contact" and have the Exchange account forward to the new
"Contact".

        What's the best method for forwarding emails to an outside
source on Exchange? 
         
        I read some where that I should create an new account, adding
the persons external email and making it the default, then forwarding
the email to that new account will send the email to their external
account??? If this is the case am I leaving something out as I have done
this yet nothing gets sent to them.
