I also had a similar issue with an older version that seemed to be causing the information store to stop but I was using the Enterprise Version of Exchange 2000. Symantec had a patch and it fixed the problem, however that was nearly three years ago. I have not heard of any issue's with there latest version although I have never tried it on SBS server. I made sure that I was fully patched up on Exchange 2K and the problem went away. Having said that it's not that easy to ascertain which patches you have installed and which additional patches you need.
